if you are are not very experiences in international trade and this is some you start with, i would go back to back to cover my risk: means you would buy FOB Plant (north american term FOB extending into a wide range, must specify) and sell the same term. so your canadian buyer arranges shipping.

it is wherever the title transfers becomes the point of all expenses, risks and responsibilities/liabilities transfer. so buy and resell at the same term covers a good ground and goes for a long way until you are more experienced. (many american enterprises today are still paying for the lack of such experiences today)

what may comes up include but not limited to dodumentation
produced incurring dsicrepancies from L/C requirements when present to bank to draw with. at this point, you would be at the mercy of buyer to either allow you to present as is, or they change L/C, or ...

if you still want to do CIF or DDU/DDP
then shipping of your vests should be containerized cargo thus
easy to handle: china/north america are bi-weekly sailing from
a dozen carriers. find a FFI to quote for you (since you are not experienced rnough to do it yourself yet as i presume_ including the scheduled cut off days that you need to iform vendor/supplier, and you want a door to door service cover both end, and make sure you ask FFI for entire transit time and frequency to make you contingency plans

still any thing could happen between the two points, you need to be prepared.

this is not just about contract, L/C terms are crutial too

then the execution process is more important

this is why many american enterprises today use 3PL to cover this part.
