Exit strategy is important, glad you have considered this critical issue before jumping in.
Many MNCs have a 5 year limit on expat contract, after that, you will be forced into local terms.
For executive level postions it is quite common to have a predefined contract with positon/rank after oversea assignment. So exit is relatively easy.
For lower level position like yours, it is case by case. You need to bargin very hard before you leave for China. From all the friends I know, very few made the successful transition back to US when taking on lower level job like yours. From China->US->China->US, the 2nd time around transition is harder. From your post, you seem to be aware of that.
Make things worse is that even if you are promoted to an executive rank in China, it does not guarantee the same job/rank back to the US.
If you have school age kid(s), it is also important to consider when to exit if you want the kid(s) to receive US education. There are intl schools in China that costs about 15-20K+ US per year.
